Why the car comes a little tilted when doing this:

Did you put a straight piece on top of both loop ends?
I think these are needed to allow car to leave loop without tilting.

This is a common problem. Try driving C13 from Nadeo, for instance.
From my experience a lot of it is how you drive it. Best is to not use air control (don't brake in the air), and to initiate a tiny drift as you leave the first quarter pipe. This should enable you to land without catching on the lip of the receiving quarter pipe and flipping. It's still one of the harder environments to do this kind of jump on. Desert was also very difficult for this type of jump and sometimes suffered from the same problem.

Skeleton, you do the same as the Gold medal ghost... doing the 360 spin. It also seems to help sometimes, but not always. I'm surprised you've not had problems.

I have not found consistence with any method about braking before or in the air, or drifting off, or letting off of gas alone. Like, none of that matters.
The best luck i've had is taking close to the shortest path across. Close, but if you take it too short you crash also because you go slower, as it seems to be related to speed as well. So from my experience, it doesn't make a difference if you brake, gas, drift, or whatever, just make sure the path itself is close to the shortest while maintaining maximum speed possible.
Specifically on c13, however, the backwards 360 works well on the first transition.

I've found it a little tricky on C13 due to not enough speed on first loops but still durable
OK been running C13 and all loops can be done perfectly, hardest part is doing all three perfectly on the same run lol
First one keep left to take a narrow loop but with a little height. Air brake when aiming straight down then give it lots of gas. This will tilt your car perfectly for a smooth landing. Second can be taken smoothly doing a 360 and last one seems straight forward.
That's my conclusion so far.
On that note I'm not a racer or a builder but I love the game and the fun factor.
