1. A slippery surface, such as ice (like in an ice rink) and marble.
2. Tracks without barriers on the edges.
3. Race mode - everyone starts at the same time and does a certain number of laps. The first person to complete all the laps wins.
4. Team games (for clan play). Modes could include team time trial and team race. Each person joins one of the two teams and then competes. For time trial, the winning team can be decided by one of the following pre-specified methods:
4.1. Average time. The team with the lowest average wins.
4.2. Fastest time. The team with the fastest time wins.
4.3. Sum of differences from mean. All players' times are averaged and each player's time is subracted from this average time. The difference for each player is summed up on each team and the team with the greatest positive difference wins. Thus suppose two teams with 1 player on each team. On team A the player has a time of 10 seconds and on team B the player has a time of 20 seconds. The average time is 15 seconds, the difference is +5 seconds on team A and -5 seconds on team B, thus team A wins.
For race mode, the winning team can be decided by one of the following pre-specified methods:
4.4. Average position. The team with the highest average position wins.
4.5. First position. The team with the player that took the first position wins.
5. Bring back the podium from TMNF.
6. Cockpit camera.
7. I really don't like the map editor, hence I would like to modify it slightly. I'd like to have WASD to move around; use the mouse pointer to direct where I'm looking; R to rotate a block; right click to enter and exit free-roaming so that I may select a block from the menu; and Q and E to increase and decrease the elevation of a block, respectively.
8. Weather: rain, snow, fog, etc. (especially fog which adds another challenging element to the game). In fact, for fog it might be quite cool to add it as an intangible block so that map editors can put fog in certain areas of their track.

How about diagonal tracks.
eg. Track segments that can go on the 45° angle.
another eg. if you were looking down on the stadium, the track segments can only go vertically and horizontally. Any of the angles in between have to be made out of "vertical" and the "horizontal" segments in quick succession, making for a wiggly road.

For the podium: In Canyon, there's a podium block where the game places the cars at the end of a map just as it placed them in the gray area of TMF, plus it's possible to put Mediatracker (camera path, text etc) for the 15 seconds of the podium. I think it's safe to assume this will be implemented for Stadium as well.
