Having Canyon in the same directory folder as Stadium, these two will not conflict or something?

no, they're supposed to work like this. you don't really install Canyon or Stadium, you install Maniaplanet (which can include canyon, stadium, etc in any combinations), so you basically installed two maniaplanets, which makes no sense ^^

But, this topic is for 4 days , can someone tell me why can't I turn the shadows lower than High?

We already try to! This seems to be a problem no one else has, so we try to find the reason. Your folder structure/maybe 2 installations may be one reason. It could be that you change the settings in one installation, but the launcher launches the other with high shadow settings.
Did you try the preset "good" already and have a look, if the game takes this settings? Just to check if it`s a problem with customizing and saving the settings. The preset "good" has shadows on minimal.
