Try to switch to windowed mode before shooting, you'll be able to change the resolution then.
I was confused by this. My way around it was to render 1 second of video at the full resolution, then select and render the same replay for the full length, with the (now adjustable) resolution.
Why did this work? ........ because that 1 second render puts the game into windowed mode automatically!
I just didn't register the fact that it worked because I was now in windowed mode ....... doh!
