I guess you can only do that in a special stunt-mode or something similar, I highly doubt you can pull off that air control in a regular race

Yes that must be it, otherwise I don't know what to think

The guy in the video goes through several menus before he starts the level, maybe you can see there if it's a stunt mode or something?

In the solo mode campaign it looks like he doesnt use that "air control" (or it doesnt exist) but then on the second race he enters a "world challende" menu and on that tracks he spins around with air control at every jump.

first track menu = campaign => solo mode (no air control)
second track menu = campaign => world challenge (air control and there is no special block to trigger that)

Safe assumption to say it's a "stunt mode" then. Man, I wanna play this already.
