After extracting all you will find two batches: RunSrvTM.bat starts the server for Canyon, the other RunSrvSM.bat starts it for Storm.
Inside the batches you can see which configuration files are used.

You will also need to copy or rename dedicated_cfg.default.txt to dedicated_cfg.txt and enter a server name in this file (at <server_options> <name></name>).
Then save, start, and you can do a test run locally.

Well i didnt find the default.txt file, where could it be?

Did you extract all the files?
UserData\Config\dedicated_cfg.default.txt should be there

No, please extract the zip file with the dedicated server to a totally different place!
Just to avoid any further issues with your regular ManiaPlanet setup.
