Using the default config, port 2350 and 3450 should both be redirected to your computer. Also make sure TCP and UDP connections are allowed.
At least it was like this with the TMF server, I never bothered to host a server at home. (Because that's IMHO a bad idea, but I do understand that not everybody has a dedicated server at hand.)

There's gotta be some port that needs to be opened specifically for a non-dedicated server or something!

It definitely is 2350 and 3450... Otherwise check the ports given in the ManiaPlanet Launcher
(Configure -> Advanced -> Network)

PS: Also make sure, that you forward those ports to the correct internal IP address... E.g. here at my home, we have 3 computers, 1 mobile phone and two satellite receivers connected to our router, therefore each has a different internal IP address (could look like this > My PC: 192.168.1.3, Mobile: 192.168.1.7 < )
