Well to be simple my favourite environments are Bay and Coast (Bay because of the similarities to Stadium, also the huge city-esque levels you can build) and Coast because of the simulation, drifting and of course, the silly stunts
But Stadium's car is by far the easiest to drive, because the handling is more forgiving. It's just that with the other environments, you have only a very limited area of control for the car (in other words, you're only able to move the analog stick just slightly else the car will slide) whereas even in realistic games the game tailors the car's maximum steering angle at high speed, to give you more freedom in moving the analog.
If that makes sense.
I do hope that Canyon is unique. But I hope also that Nadeo are able to make the handling of the car easy to keep under control at speed, because that was always my problem with TM's other environments.
