My FPS is low and the game looks like crap.

In short:
16GB DDR3 RAM
Intel Core i7-3820 CPU @ 3.60GHz
NVIDIA GeForce GTX 660 Ti 2048MB
NVIDIA GeForce GTX 660 Ti 2048MB
(Running SLI)
And the game settings I'm using are default 'Very Nice' and 'High definition' at 1920x1080 FullScreen.
So any ideas how to get this game running properly and looking good, this isn't playable or acceptable with my rig.

Ok, so setting my SLI bits for the game to: 0x02802205 doubled my fps almost (40ish %).
But still, pretty low FPS for it looking so crappy.

SLI don't work on Shootmania, disable one Graphic Card and retry !! + check if ur fps is not blocked at 50! ( on settings )

my FPS isn't blocked and SLI works fine now with the new SLI bits. It just looks like crap.

Please post screenshots of general 3D nVidia control panel settings, of ManiaPlanet related nVidia control panel settings,
and of both the advanced video configuration and the compatibility dialog of the ManiaPlanet Launcher application.

NVidia control panel is default except for the new SLI bits and vsync enabled.

configuration looks good but its difficult to compare. I think I usually have more grass details, and the filtering and the mipmapping looks strange on your screenshot.
It would be better to take a screenshot of a specific map that everyone could download at once for a real comparison.

So what do you suggest? The game looks worse than Counterstrike Source. Very, very far from the quality I saw on the commercial video.

It also depends a lot on the maps.
The commercial videos were taken from maps created by absolute pros, who know how to place the blocks nicely to avoid boring or ugly places.
I guess the map you've shot is not the best design example.
Of course some beautifying effects are there on rendering videos for show (it is called MediaTracker), but this is built in, and everyone can use it.
You can't have maximum performance and maximum quality at once, this is always a tradeoff.
Just from the one screenshot I agree it looks not very nice, but this is not enough to tell where the actual cause is.
Perhaps don't use "default" settings of the nVidia control panel, but let the maximum possible settings on "application specific" instead.
And check again the filtering and texturing quality in both control panel and application.
